Kat and I make this recipe when we don’t want to hassle with doing any real cooking.
Easiest Black Bean Soup Ever
Makes about 4 servings
Two Cans of Black Beans- Drained
1 Cup of Chicken Broth
8 oz of your favorite Salsa (about half a jar)
Sour Cream to top
Chopped up ham or other meat
Put a medium pot over medium high heat, and add just the salsa.
Allow the salsa to warm for about 2 minutes, or until you really start to smell all the salsa components.
Add your black beans, and chicken broth.
Lower heat to medium.
Allow everything to cook for about 10 minutes.
Take about half the soup (just eyeball it), put it in a blender and puree it. We use a stick blender that goes in the pot, but a blender or food processer would work the same. This is just so the soup is not so chunky.
Add puree back to the rest of the soup.
That’s it, you are done. Serve into bowls, top with some sour cream and cheese if you want, but it tastes good even without it.
The flavor will change depending on what kind of salsa you use, we found a smoky one that is great, and we like a bit of heat to the soup so we usually use medium salsa, but I am sure just about anything will work.
